Look I clown veganism often enough but really, truly, don’t ever fucking feed somebody something without their knowledge or consent. It’s hugely fucked up and not OK.

also if someone hasn’t eaten meat in a while… or ever… they will get incredibly sick if they just start eating meat again.

|| Please don’t do this. Not just with vegans/ vegetarians, but with ANYONE you don’t know very well. You never know what they may or may not be allergic to, their abilities o(or lack thereof) to digest certain things, dietary needs and restrictions, religious beliefs requiring them to abstain from the consumption of certain foods and about a thousand other things.

Some people are legitimately allergic to thd proteins in certain meats and can’t even eat anything cooked in the same pan as X meat product/s.

I’m vegan but couldn’t care less if others aren’t, not an overwhelming number of (not all, just alot, unfortunately) non vegans find things like this funny.

Quick reminder: Sometimes people say “I’m vegan” or “I’m vegetarian” because its easier/faster/begets fewer annoying questions than the longer explanation.

As an epidemiologist I can list a few of the more annoying longer explanations that no one wants to have to explain to every person who ever offers them food:

- You drank water contaminated with giardia, which gave you 3 weeks of diarrhea followed by 3 years of lactose intolerance

- You were bitten by a Lone Star Tick and developed an allergy to beef and pork because the Lone Star Tick is a bastard

- You are Jewish and the meat isn’t kosher, but you don’t want to say that because antisemitism is A Thing and you don’t want to get bombarded with questions about the Middle East while you’re hungry

- You are Muslim and the meat isn’t halal, but you don’t want to say that because Islamophobia is A Thing and you don’t want to get bombarded with questions about the Middle East while you’re hungry

- You are on a restricted diet for medical reasons and don’t want to get bombarded with questions about your medical history while you’re hungry

- You are on a restricted diet for reasons that *are nobody’s business* and don’t want to get pulled into Potentially Triggering Diet Talk while you’re hungry.

Listen. Food can be very very complicated for people, and a very very very sensitive subject. Respect people’s food restrictions. None of it is your business.

I was feeling a little apprehensive about releasing the TOS Food Document™ because it is so damn long…. But since you asked anon

DISCLAIMER:

This is focused solely on food as it appears in the original series. Whatever explanation of food synthesizer/replicator that may come in later series does to apply here. I am also not a Star Trek expert. I’m sure there is some super fan out there who knows everything there is to know about food in TOS, but that person is not me. This is just my thoughts as I’ve observed instances where food is shown or mentioned in TOS. If my thought process is flawed, or I make some claims that don’t really make sense, I am sorry. The food canon is very complicated and vague, so this is me just trying my best to make sense of it. I’d also like to mention I did not explicitly cover the meal scene in What Are Little Girls Made Of? Or the ice cream scene from And The Children Shall Lead, but I do make reference to them. I’m sure there are other food scenes I didn’t get to cover here, so if I’m missing a few pieces, I’m sorry.

Anyway… let’s get into it!

The original series, food, and other things that keep me up at night

I don’t care about continuity or plot holes in Star Trek: The Original Series, and if I did, I think the show would become rather unwatchable. It’s not about what happens to get us from plot point A to B, but more important that we do get there (ie, who cares how or why Spock’s brain has been removed from his body, it’s more important that we do get it back inside).

This being said, there is one aspect to TOS that baffles me to no end, and its something I just cannot overlook: the food. Food, the entire concept of it as it appears in TOS haunts me. Each time they show or mention food it makes less and less sense. It’s a never-ending nightmare and I spend every day trying to understand what goes on in the Enterprise Cafeteria. Today I would like to explore a couple food instances on TOS, and hopefully make a little sense of what is happening.

The first chilling incident: The Man Trap (S1E2) - Rand is a thief

In this episode, we see Yeoman Rand on her way to deliver Sulu his meal. She is carrying a tray of colored food cubes (which is what I will be referring to them as here, because there is no official name) and what we can assume to be some kind of alien variant of celery (earth celery with some red crap stuck on top). While waiting for the turbo lift, Rand eats one of the celery sticks intended for Sulu. My question is why. Like literally why does this happen. Sulu never mentions it (maybe he doesn’t notice). She never mentions it to him, which means we can assume she doesn’t want him to know. So why is Rand stealing food? Does she not get enough to eat? Is the limits for how much you get to eat on the Enterprise that strict you need to turn to thievery to get a proper meal? and if that the case, she’s shorting Sulu on his allotted food. In this same scene, we see Ensign Green (who is really a salt-sucking monster) make a grab for the tray as if he too is going to steal Sulu’d food. However, Rand slaps his hand away and asks “who do you think you are?”, a hypocritical statement considering Rand is also in the act of stealing food. So Rand, I must pose the same question to you. This scene has no resolution, so any interpretation is up to the viewer. Whether you think Rand’s actions make her a girlboss or a thief, is up to you, however, one thing is undeniably true: Rand eats food off other people’s plates.

Other food-related things of note in this episode is that Sulu sprinkles salt on the celery sticks. This means they are either bland or that’s just his personal taste. Also, when Rand gives him his tray, he says “may the great bird of the galaxy bless your planet” and this has nothing really to do with food, I just thought it was kind of badass.

Incident two: Charlie X (S1E3) - synthetic meatloaf

In Charlie X, we see Captain Kirk make this comment in passing:

“Today on earth it is Thanksgiving, if the crew has to eat synthetic meatloaf I want it to look like turkey.”

This statement leaves us with a couple undeniable truths:

1. Meatloaf is a meal option on the Enterprise.

2. It is synthetic, meaning the meatloaf may not contain any meat at all.

3. It is not shaped like turkey, but it is possible to do so.

if the meatloaf served on the Enterprise is synthetic, then it very well could be made out of the same stuff the colored food cubes are made out of. Also, (and this is pure speculation so take it with a grain of salt) since we never hear anyone refer to the colored food cubes by name, they could literally be the “synthetic meatloaf” that Kirk is referring to here. In this case, the term synthetic meatloaf would not mean a synthetic version of the popular American dish meatloaf but instead loafs of synthetic meat. Since we do not know exactly what synthetic meat looks like, it very well could be brightly colored cubes.

In either case, Kirk is asking them to turn synthetic food from one shape to another. We understand this is possible through the food synthesizer, however, if all the food they eat on the Enterprise is synthetic anyway, then why did Kirk specifically mention synthetic meatloaf in the shape of turkey? would the turkey not instead be made out of synthetic turkey? why must the synthetic turkey be made specifically out of meatloaf? isn’t every single food that comes out of the food synthesizer made out of the same thing? It would have made more sense for Kirk to say “it’s thanksgiving so can you made the food synthesizers produce turnkey?”. However, Kirk is like, a really cool guy, so it is possible that the meatloaf comment is just a fun joke. Either way, we know that synthetic meatloaf is a standard menu item on the enterprise, yet we have never seen anyone consume it.

Incident 3: The Corbomite Maneuver (S1E11) - Green leaves

In this episode, Kirk goes in for a physical, and Doctor McCoy reports that the captain is 2 pounds overweight. In response to this, the Doctor changes the captain’s dietary card to help him lose a little wight (🙄). We later see the captain served a “dietary salad” in place of his usual meals. The existence of dietary salad is interesting for many reasons. Most importantly, we understand that dietary salad is somehow better for you than what is usually served on the Enterprise. It most likely has a lower caloric intake than say, colored food cubes. However, as discussed before, most if not all the food on the Enterprise is synthetic. If the food is created, and not naturally made, then one can assume its caloric value can be controlled. Would it not be possible to make a lower-calorie version of colored food cubes? one would assume that the cubes are made to have the perfect amount of nutrients to satisfy yet keep humans a healthy weight if they are in fact a form of synthetic man-made food. How would the captain overeat, if portions are pre-determined by dietary cards? Is Kirk somehow going rouge and consuming food that is not created by the food synthesizer (the captain’s secret cookie stockpile??).

The existence of this salad also begs another question: is it synthetic as well, or are they growing fresh salad on the Enterprise? We do know that they are able to grow things on the ship, however, there has never been any discussion of growing crops specifically for consumption. If this is the case though, it may explain why we often see crew members eating celery sticks. Perhaps things like celery sticks and dietary salads are grown on the Enterprise, but all other food is synthetically created. In which case, who’s job is it to harvest food and prepare it for meals? Did Rand have to put that dietary salad together all on her own?

One more interesting point about the Salad: When Kirk first receives it, he asks

“what in the devil is this? Green leaves?”

which prompts Rand to explain that it’s a salad. It is very possible that Kirk genuinely has no idea what a salad is. He may have never had one, nor heard of the food in his entire life. Later we see him eat the salad with his hands, which further proves the point that captain kirk doesn’t know what salad is. Why captain Kirk would somehow have no knowledge of salad is up to speculation.

Incident 4: The conscience of the king (S1E14) - Cry over spilled milk

In this episode, Lieutenant Riley is served colored food cubes and a glass of what appears to be milk. There isn’t much of significance here, other than the fact we know it is possible to get a glass of milk with your meal on the Enterprise. Unlike Sulu, Riley doesn’t have any celery sticks but seems to have a larger serving of colored food cubes as compensation. We also learn that milk is served in a large glass, something that seems very impractical on a starship.

Riley proves my point moments later when he spills milk on a control panel and shatters the glass. This begs the question, who is going to clean that up?

Incident 5: Tomorrow is Yesterday (S1E20) - Chicken noodle soup

In this episode, the Enterprise accidentally beams a 60′s army man abroad their ship (for the second time). This random chad ensign asks the man if he’s hungry because he’s a troll I guess and he wanted to flex their cool future food machine. The army captain guy is like sure, I could go for some chicken soup right now (a very natural response to being beamed onto a spaceship for the first time). Chad ensign has like three cards in front of him, and I guess one of them just happens to be chicken soup because he puts it in the machine and the soup appears. Grant it, we never actually get to see the soup with out own eyes, but the army captain does seem to be pretty convinced that it is chicken soup just by the smell. This opens up a couple possibilities:

-The food synthesizer can make almost anything you want, and the card is maybe like a very broad category, like a dinner card, and when you put it in you can pick any dinner food you’d like.

or

-The food synthesizer can only make what is specific to each card, and the ensign just got extremely lucky and happened to have a card that was the exact food the army captain wanted.

More evidence, which we will go over later, points more towards the theory that one card is equal to one specific type of food. In this case, it is unclear how the synthesizer food cards are distributed, or how you get your pick of what food you would like. It is also more likely that options would be limited. This does make sense, however, it makes this scene very confusing, as, as I’ve pointed out, the ensign had a very limited number of cards, but exactly what the captain had asked for. Pure luck? what mind game was that Chad ensign trying to play with the poor man who was abducted from earth… we will never know.

One more very interesting thing is established here: The transporter room has a food synthesizer. Why this is is purely up to speculation. In my mind, having a food synthesizer in the transporter room would be like having a full kitchen where you park your car. Seems pretty useless, but maybe the guys in the transporter room requested easy access to snacks? Why the transporter room would get this special privilege is again, up to speculation.

Incident 6: Space Seed (S1E23) - Dinner with Khan

In Space Seed a special dinner is put together to welcome Khan onto the Enterprise. We see that they are being served colored food cubes and celery sticks. Doctor McCoy walks into the dining room and comments about how the display is “very impressive”. However, this seems like a very unusual comment considering we are shown the only food we have ever seen consumed on the Enterprise. What exactly makes this food “impressive” as compared to other celery sticks and colored food cubes? Is there some way to tell this particular food is better that we don’t know about, but is obvious to everyone on the Enterprise?

There is also a chance that Doctor McCoy is just very easily impressed with food, and upon seeing any food spread he is likely to comment in wonder. Note the way Scotty is looking at McCoy. His face is a mixture of confusion, judgment, and pity. Perhaps Scotty is thinking to himself “bruh, it’s literally just colored food cubes chill out man,”. There is no explanation as to why Scotty is giving McCoy such a look, so this very well could be the case. Even though it is a silly explanation, I don’t think it should be ruled out that one of McCoy’s personality traits is being overly excited about food of any kind.  

Incident 7: Journey to Babel (S2E10) Party food

Much like in Space Seed, in this episode, we get to see a meal put together for a special occasion. All the diplomates are getting down at a mixer where a spread of food has been provided. These snacks seem very similar to colored food cubes, however I do think they differ. They may be the same type of food, but different in some way. In which case colored food cubes is an overarching category of food, and here we see two different types. The smaller more brightly colored cubes can be put in drinks, though if this is what you are supposed to do with them, or just the preference of that one alien species I do not know. Though I must point out, we have seen colored food cubes served in brown sauce in What are Little Girls Made Of? (S1E8) so it is not completely unheard of to have your colored food cubes served soggy.

The other type of colored food cubes we see are a lot larger and more pair shaped (in reality, they probably were just skinned pairs dipped in food coloring, but for this essay, it’s important that we completely ignore the fact there is another life outside of Star Trek). Now to me, these are very interesting, because the dull color and apparent texture are a lit more similar to standard colored food cubes we have seen thus far. I would even go o far to say that this is the same exact food, just sans the cubed shape. So really, standard colored food cubes are just the cubed version of whatever this food is. This, again, is just speculation, but it does point us to the fact that colored food cubes are not naturally cubed (I’m going somewhere with this is promise)

Incident 8: The Trouble With Tribbles (S2E15) The trouble with Chicken sandwichs

Here we see Kirk attempting to order a chicken sandwich and coffee. What he gets instead is a plate full of tribbles,  hilarity ensues. I think this scene is interesting because we can add to our list of food items that are on the menu at the enterprise cafeteria: chicken sandwich. However, this is another food item we do not see. There is no way of knowing if the Enterprise’s version of a chicken sandwich is what we would imagine a chicken sandwich to be. Much like the meatloaf and the soup, because we do not see it, there is no way of knowing if the food exists in the way that we as 21st-century people understand it. The events of TOS take place more than 200 years in our future, so to speculate that food could change a lot during that time isn’t a stretch. I don’t know, just some food for thought (lol)

Incident 9: By Any Other Name (S2E22) Living deliciously

In this episode, an alien taking the form of a human enjoys some colored food cubes. He makes a comment about how they are good they are while enthusiastically eating his food. This is a very important moment because it tells us that colored food cubes do taste good. In fact, they taste really good. Just before he eats, the alien comments on how humans could just take pills that give them all their nutrient needs and give up food completely (think the Jetsons cartoon). On the Enterprise, they do not eat just to live, but because they enjoy their food as well. This tells us that colored food cubes are at the very least, worth eating, and at the best, very delicious.

One more interesting thing: Spock is eating some kind of soup while everyone else enjoys colored food cubes. This could be a Vulcan preference, however, we know that Spock is vegetarian. This could be alluding to the fact that Colored Food Cubes are made out of meat.

Conclusion:

Yes, I asked a lot more questions than I answered. There are some things that make absolutely no sense to me, primarily, the food synthesizer and diet cards. Some evidence points to the fact that the food synthesizer can make practically anything (see Tomorrow is Yesterday, And the Children Shall Lead). However, one dietary card is equal to one specific food, which would mean they would have to produce a lot of these dietary cards if there is many meal options. How these cards are distributed, and what their limitations are, we do not know. And although we do not know the limits of what the food synthesizer can create, we do know these food have been served on the enterprise at least at one point:

-colored food cubes (variety)

-celery

-synthetic meatloaf

-synthetic turkey (Thanksgiving Special)

-Dietary Salad

-Milk

-Chicken Soup

-Chicken Sandwich

-Mystery Soup

-Ice cream (variety of flavors)

All of this food (except for maybe the dietary salad and celery) are synoptically created, so what they are actually made up of, I cannot say.

And finally, I would like to make a point about the colored food cubes. I think upon first inspection one would assume colored food cubes is a dish created specifically for space travel (think the food created for modern-day astronauts to consume in space). However, we learned that there is possibly a variety of colored food cube dishes. Since there is such a wide variety of food on the Enterprise, why would they also need to create a food specifically for space travel? I think that colored food cubes are actually a common dish, not intended specifically for space travel. Perhaps it was an alien food that got popular on earth, maybe it was a dish developed later in Earth’s history by humans. I can only speculate, but I do think it is more than just boring space food. Everyone seems to have a preference for it, so I think it’s a dish you can eat over and over again and not get sick of. What colored food cubes taste like is completely up to speculation, but I would assume they are a savory food, considering we often see people enjoying them for their main meal.

I still have more to say, but for the sake of everyone, I’ll end it there. This was a lot of thought dumping, so if some of the things I said made no sense at all, I’m sorry. This is great and I love it. I always assumed Spock’s soup was Plomeek Soup because that’s the only named soup that we see served to him (which he flings against a wall, so maybe that actually means it’s NOT his favorite soup, and he’s actually eating a vegetarian variant of chicken noodle soup in this scene, hehehe).

Foods Humanity Figures Out Everywhere

  2. stew? gravy? curry?: like soup but less water more food 
  3. porridge: add water to the starch but not so much. warm and mushy yum
  4. pancake/flatbread: make the starch wet and flat, then put on hot surface.
  5. fried starch thing: Use hot oil to make starch crispy yum++
  6. dumpling: put the not starch in the starch thing and cook it.
  7. alt dumpling: ball of starch added to soup or stew. makes chewy starch ball yum yum
  8. filled portable food: starch wrapper of some kind to make it so you can eat the messy food with your hands.

As a side note… I am really annoyed by one thing about Star Trek.

“Replicated food is not as good as real food.”

That’s ridiculous.  In Star Trek, replicator technology is part of the same tech tree as transporters.  Replicated food would be identical to the food it was based on, down to the subatomic level. 

Proposal for a Watsonian explanation:

In a blind taste test, nobody, but nobody, can tell the actual difference between replicated food and “real” food. (Think back to our youth and the New Coke vs. Pepsi taste tests, only worse.) BUT, humans being What We Are, the human Starfleet members insist that “real” food is better than replicated food for reasons including, but certainly not limited to:

1. Hipsters have survived even into the 24th century. “No, you just can’t make good curry from a replicator! You gotta toast the spices yourself right before you cook it or it’s not the same, maaaaaan”

2. All military and para-military members everywhere always grouse and bitch about the food and sigh over What We Get Back Home. It could literally be the same replicator recipe you use at home when someone has to work late or just doesn’t feel like making the effort to cook, but people are people everywhere so they’re going to complain about it.

3. Humans tend to think we’re smarter than we actually are and we can totally tell when something is going on; as a result, human crew members insist they can “taste the difference” because their minds are making shit up, as our brains do.

4. One could presume that, generally speaking, a replicator recipe programmed into a starship or base replicator database would come out the same every time. This is perhaps the 24th century equivalent of mass catering. (I won’t try to account for the nuances of replicator tech that might allow for variances, and leave aside for the moment the fact that some people probably tinker with the standard “recipes” to suit their own taste.) The single thing that would be different in this case about “real” food is the variation, since of course the “real” dish will have slight variances every time due to the whims of the cook, the oven temperature fluctuation, freshness of ingredients, etc.. And since we are an easily bored species who really, really hates boredom, I bet people would jump all over that to lament the lack of “real” food when they’re out exploring strange new worlds and new civilizations and whatnot. (This is the only reason I can think of that might hold up to scrutiny.)

The Vulcans in Starfleet (and Data), of course, remain baffled by this human insistence that “replicator food isn’t as good as ‘real’ food”, as it defies all known forms of logic.

Hmm.  This is a fair point.  It occurs to me that I once met a Texan who commented that the chili in a restaurant I worked at was not as good as what they made in Texas, and when I pointed out that the cook was a Texan and the chili was his personal recipe, for which he had won awards in Texas, just said “Doesn’t matter.  Wasn’t made in Texas.”

I gotta be honest, Replicator technology is one of the things I am SUPREMELY jealous of, and I’m… okay, I’m not a great cook, but I can cook and there are several dishes I do very well.  I think if I had access to the technology I would cook a lot less, though, and I would for sure use replicated ingredients. 

1. It is not just hipsters that act like this about food. All the grandmothers I know feel this way too, and I don’t see that ever changing.

The missing ingredient is love, obviously. You can’t get that from a replicator.

Right, for that you need the holodeck.

Okay so, we’ve missed a few things that I think are relevant here: 

The replicator or replicator + holodeck combo can’t recreate the experience of cooking, nor can it recreate the experience of being cooked for. And that experience makes food taste better

Cooking is what makes us human. No other species on this wet rock cooks its food–only us. 

First: if you’re making lamb stew, or phở, or mole, or curry goat, you spend hours puttering around the house doing chores in a cozy sweater, periodically petting the cats and playing with the kids, waiting an anticipating the hour in which you get to eat the soup. All the while: your house smells like lamb stew, or phở, or mole, or curry goat. 

You get a tamale from the replicator: it’s pretty good. You wish it came with a green olive with the pit still in like the kind your abuela puts in her tamales. 

You get a tamale from the tamale lady on the way to work on a clear, crisp fall morning. It’s so hot from her steamer that it nearly burns your fingerprints off and it smells divine; you use all of your Spanish to tell her how good it is and how grateful you are that you pass her every day. On a whim, you buy 30 more tamales to share with the office; they’re still warm at lunch and they taste like friendship. 

You get a tamale from your abuela. It’s Christmas Eve, your entire family has spent the last seven hours making them, your tio Juan just busted out his tuba and it is definitely too hot outside for the fake snow  your baby cousins have started throwing at each other in between begging to open just one present and if you don’t hurry up you’re all going to be late for mass. 

The tamale tastes like home

You get a tamale from the replicator. Its neural network reviewed your order against every known tamale recipe and variety and decided that your addition of “green olive, pickled, pit in” was a mistake, and omitted it. 

Your tamale tastes like homesickness. You ball-up the corn husk and 

Second: The replicator is probably not accounting for regional variations in ingredients for its base foods. 

The ingredient library may have jalapeno, red; jalapeno, green, jalapeno, (color slider), (heat slider). It probably does not have: jalapeno, Hatch new mexico, USA, earth, sol system; or jalapeno north face Olympus Mons Mars, sol system. Replicator Parmesan is very likely a scan of a Parmesan and doesn’t duplicate regional variations between, say, a Parmesan from Mantua vs a Parmesan from Parma. 

Did your grandmother use san marzano tomatoes that were actually grown in san marzano in her red sauce (, canned, peeled, whole in juice)? Sucks to be you, the replicator scanned a hydroponically grown plum-type tomato which environment was carefully controlled for optimal nutritional value and “pretty good” taste. 

Is the replicator cilantro a kind bred or genetically engineered for maximum palatability across the broadest spectrum of individuals? Is it missing the gene that makes some people taste soap when they eat it? Is that gene the one that makes it taste good to you, so that the replicator chimichurri is always missing something, some particular specific type of freshness, a unique vegetal taste that you can’t put your finger on, and it’s not important enough to track down when you just like the chimichurri you make at home, from cilantro your grew yourself, much better? 

Third: The recipe database is probably sourced from hundreds of thousands of recipes written over centuries’ time – and then averaged using a combination of median and modal averaging to come up with something that’s Pretty OK to most people, but which is going to leave others wanting–no matter how much they tweak it.

It takes you three more tries to get a cup of hot earl grey. You decide you’ve finished pressing your luck with this positively infernal machine today and don’t even bother asking for a lemon wedge. 

If that doesn’t indicate that the replicators were programmed by an American, I don’t know what does.

Also, regional recipes are calibrated to work with the local tap water. That’s why pizza from New York and sourdough from San Francisco taste better–the micro-organisms in the water enhance the flavor. The chili that wasn’t made in Texas probably did taste subtly different than it would’ve back home.

There are lots of things that would change with replicators because they take out the human factor.

Maybe you really wanted that one meal from that one restaurant except the restaurant doesn’t release their recipe so it’s slightly off and always will be.

You programmed the replicator with your mum’s favourite mac and cheese recipe, but you didn’t know that your mum always added a little more salt and a little less mustard than the recipe called for, so it’s just not the same and it’s not as good.

Pretty much this. Also I think we cannot overstate the degree to which “the food always comes out exactly the same” would end up bothering people over time.

Important point is that these are “military grade” food replicators and military food is never really great. Hence the difficulty with the tea. Food replicators in private homes and restaurants are more controllable and may have programming for varieties of chilies or tomatoes or even carrots. There are 4 basic kinds of carrots but only one is available commercially, the others need to be grown at home. With a programmable home replicator one can have chantenay carrots… all the infinite varieties of foodstuff ingredients will be available with the right programming and therefore civilians in the 24th century in star trek will have perfectly customisable food. My mind is boggled now…

For a real-world example, but in the other direction:

When I was a child, my mother used to make chili using “Carroll Shelby’s Texas Chili Mix.” It made… okay chili.

When I was in college I found a book called “Chili Madness” at a local used bookstore, that had the winning recipes from the National Chili Cookoff for the last 30 years. It included Carroll Shelby’s actual recipe. So I made it. (Had to get one of my apartment mates to source beer for me, as I was not of age to purchase it yet.)

Wow. What a difference. Adding the spices at different times rather than as a blob of “spice mix”. Beer instead of water. No masa. So good!

So the bagged mix would be the replicator mix in this scenario.

Anytime someone says ‘it’s just vanilla ice cream’ I have to restrain myself from saying, “ah yes, the flavor produced by the seeds of a tropical orchid, a flower which blossoms for a single day before dying, the second most expense spice in the world. Just that.”

Historically, the spices I have in my cabinet are an embarrassment of riches. I have there a large container of whole black peppercorns which I grate fresh over my food. Multiple containers of cinnamon because I forgot I already had some. Ginger, cardamom, red pepper flakes, whole cloves and ground, nutmeg and turmeric. Kings and emperors have not eaten food so well spiced.

I have vanilla ice cream in my freezer (cold! frozen! when the rich would pay fortunes to send for ice from mountains to chill fruit in the summers). I am going to put on my silk robe, fix myself a bowl, and feast.

I have a culinary degree, and have worked as a professional cook, and have been a restaurateur. The “gastronomer” in my url is quite serious. I have Opinions about how people use the word chef (”chef” is a job title, it’s a French word that means “boss” and is a cognate of chief; only someone who actually runs a quality kitchen should be called a chef – you can’t be a “home chef”), about how “spaghetti bolognese” is used (it’s not just any spaghetti with meat sauce, Bolognese is a specific style that includes beef, pork and pancetta), about what a proper key lime pie is like (don’t even get me started).

Because of this, people expect me to be a food snob. I am NOT. You like what you like, and you should eat what you like, and anybody who looks down their nose at you for it isn’t a “foodie”, they’re a fucking asshole. You like Li’l Smokies in your box mac’n’cheese? Right on! You like Taco Bell? So do I! Let’s go get a crunchwrap and a gordita! You buy cheap pink box wine? Okay, but what IS a proper key lime pie? And what isn’t? I presume it’s not just a lemon pie but with lime-flavored or lime-based filling instead of lemon?

Now you’ve got me curious.

You got me started.

OK, first of all, a key lime pie is NOT made with “regular” (Persian) limes. It is made with key limes, aka Mexican limes. They are smaller than Persian limes, about the size of a ping pong ball. They’re also not a deep green, but more of a yellow-green, and the juice is yellowish. They are considerably tarter than Persian limes, and have a distinctive flavor. They’re also kind of a pain to juice if they’re not fresh-picked, so personally I always buy bottled up here in Seattle. (I’m from Florida, where part of the year you can get good ones from groves or even off your own backyard tree.) Nellie and Joe’s Key West Lime Juice is the only brand I know and trust, and if your grocery store doesn’t have it, Amazon does.

A key lime pie is a custard pie made from key lime juice, egg yolks, and typically sweetened condensed milk, in a graham cracker crust (none of your bullshit butter cookie crusts, save that for some other, appropriate, kind of pie). Traditionally, you *can* put meringue on top, but only to use up the egg whites you separate from the yolks. It’s not fucking lemon meringue pie, there should not be a huge mound. Personally I don’t like wet French meringues (made with granulated sugar, as opposed to Italian meringues, which are made with syrup), I think they feel like sweetened snot in my mouth. You can also add a small amount of sweetened whipped cream when you plate it, but only a dollop.

A key lime pie should never, EVER be green. If it is, the baker doesn’t know what the fuck they’re doing, and you should skip it. Even a custard pie made with Persian limes shouldn’t be green, ffs.

A key lime pie SHOULD be both very sweet and very tart, as well and very smooth and creamy. My personal standard for the flavor is that when you take a bite, the first thing you taste should be the creamy and the sweet, and then the tart should hit you, but your mouth shouldn’t pucker until you take a sip of water and wash the sugar away.

A key lime pie filling should not contain flour, starch, gelatin, or other stabilizers. It should be as simple as possible. Key lime pie, historically, is poor people food from the Florida Keys, using the basic ingredients they had lying around: limes from the backyard, eggs from the chickens (they still run around loose on Key West), a can of sweetened condensed milk, some graham crackers, sugar and butter for the crust. You’d stir it up, pour it into the pie shell, pop it in the over with dinner, pull it out and stick it in the icebox (with literal ice) to cool, eat it the next night. (Unless you used a no-bake version, where the key lime juice itself denatured and “chemically cooked” the egg yolks. But it’s too easy to get salmonella that way these days, in the US.) They’re meant to be simple, dammit.

Key lime pie was the kind of thing they made in shotgun shacks. (Which frequently look a little different in the Keys than they do in those pics. The hallways often have rooms built off both sides of the hallway, and the roof’s peak sometimes runs perpendicular to the hallway, and then additional sections might get added to the back as the family grew, leading to rooflines like ^^^^.) Just a bit of history.

So then. Key Lime Pie Recipe Time! This is the recipe my family has always used, it’s the recipe I used in my restaurant, it always gets rave reviews, and it is thoroughly authentic. Because I hate meringue, it does not include meringue.

You will need:

Hardware:

one mixing bowl

one wooden spoon, stirring spatula, or spoonula

one liquid measuring cup

one small bowl for separating eggs into

one graham cracker pie crust, recipe to follow, or use a store-bought one, I don’t care


Ingredients:

1 - 12oz can sweetened condensed milk
3 egg yolks
½ cup key lime juice

Preheat the oven to 350F.

Mix those things together until smooth. Don’t beat them hard, you’ll incorporate air into the mix, that will mess up your texture and give you bubbles. When it is completely smooth, your oven should be hot, stick your filling in the fridge for a little while. Pre-bake your crust for 15 minutes, trust me, it is so much better if you do this. Do this even if it’s a store bought crust. If you don’t, your crust can get soggy. Pull it out, let it cool 10 minutes. Pour in the filling, bake 15 minutes. Pull it out. Let it cool for 30 minutes of a countertop, then stick it in the fridge for at least four hours, preferably overnight. Share and enjoy. (Or eat it all yourself.)

Graham cracker crust recipe:

You will need:

Hardware:

one mixing bowl
one glass bowl to melt butter in
one gallon ziplock OR a food processor
a wooden spoon

Ingredients:

1/3 of a box of graham crackers
1 stick butter
1/2c sugar
one 9″ pie plate
one heavy glass with a smooth flat bottom

Dump the graham crackers into the gallon ziplock or work bowl of your food processor. If using a bag, crush them up real good, until you have a lot of fine meal and some small pieces. If you’re using the food processor, break them up roughly, then pulse until you get the same thing.

Put them in the mixing bowl. Add the sugar, and stir to combine. Melt your butter. Mix that in. It should reach the consistency of wet sand, like you’re making a sandcastle. If you pick some up in your hand and squeeze it in your fist, it should hold its shape until you poke it.

Press this firmly into the bottom and up the sides of your pie plate. Then use the bottom of your glass to press it in even more firmly. Really compact it. Then bake it as above.

Great all-purpose graham cracker crust recipe, good for cheesecake too.

If you want to get really ridiculous and over the top, make a triple batch of filling and put it in the same crust. That’s what we did at the restaurant. But you might want to find someone to share the slice with!
