reading a fic where someone mentioned in the notes that corned beef was, well, corned beef instead of ???? Tinned mince meat????

This is clearly some sort of "I live in a different place than the author" thing, but where I come from (central Canada) corned beef is seasoned (and smoked? Salted? I'm not sure) beef. You pick it up fresh at the deli or maybe in bags with the other sandwich meat.

What's it like where you live? Where on earth does it come in TINS?

my first thought was this stuff. It’s found at most grocery stores in the U.S. This is corned beef minced and mixed with cubed potato. Fry it up and eat it with eggs.

I also found this, which I don’t think I’ve ever had. Guessing it’s sorta like spam.
