West Coast butter is exactly the shape in the photo. That is what is available here. This is a very strange realization.

No way. I’ve seen the West Coast type, but I thought it was a glitch or something.
Why is it white?
Corn fed cows produce white butter. Grass fed cows produce yellow butter. The yellow pigmentation actually comes from the grass the cows eat. If you buy yellow butter in the US and the package doesn’t explicitly state that that it came from grass fed cows, it’s probably been artificially dyed yellow [source].
